Slides: Pressure-based Inactivation of Rifampicin-resistant Cronobacter sakazakiiin Infant Formula

Synergism of hydrostatic pressure at 380 MPa with mild heat (50 ÂșC) resulted in reduction of the pathogen to the detection limit after 4 minutes.

Over 5-log reduction (i.e. >99.999%) of Cronobacter sakazakiiin reconstituted infant formula is achievable as result of optimized high pressure pasteurization that could be utilized to assure safety of infant formula particularly for premature newborns and those with elevated risk of Cronobacterinfection.
